on the weekend i made a dark chocolate ganache tart for my bday boys birthday party at the house on saturday. i LOVE tarts… any type, chocolate, lemon, mousse… something about the combination of the soft inside but the hard almost cookie-like tcrust makes such a good pair. so i attempted my first torte – and it actually turned out quite nice if i do say so myself. i wish i took it out of the fridge longer before serving it. but it was still nice. and now i know better for next time thats key.
Here are the ingredients. Pretty basic stuff!
Chocolate Ganache Tart with Fresh Strawberries
1 Sweet Tart Dough (adapted from Fanny Farmer Baking book)
8 oz good dark chocolate (i used all dark chocolate – it was quite rich! if you don’t like it too rich, i would do half dark half semisweet)
8 oz Heavy Cream
Sweet Tart Dough - baked shell (using a 10″ tart pan – i didn’t have one so i used a springform removable bottom pan – was worried it wouldn’t work, but turned out quite nice)
1.5 cups all purpose flour
2 Tbsp sugar
12 Tbsp Butter
1 egg yolk
2 Tbsp cold water
1/4 tsp salt (only if you’re using unsalted butter)
